There's a terrific recipe for an apple-cinnamon cake (made in a spring form
pan) in October's issue of Cooking Light magazine. It got wonderful reviews
when I made it for Thanksgiving.

Here it is:

1 3/4 c. sugar, divided
1/2 c. stick margarine, softened
1 tsp. vanilla extract
6 ounces block-style fat-free cream cheese, softened
2 large eggs
1 1/2 c all-purpose flour
1 1/2 tsp. baking powder
1/4 tsp. salt
2 tsp. ground cinnamon
3 cups chopped, peeled Rome apples (about 2 large)
Cooking spray

Preheat oven to 350 degrees. Beat 1 1/2 c. sugar, margarine, vanilla and
cream cheese at med.. speed with mixer until well-blended (about 4 minutes).
Add eggs, 1 at a time, beating well after each addition. Combine flour,
baking powder, and salt. Add flour mixture to the creamed mixture, beating
at low speed until blended.
Combine 1/4 c. sugar and cinnamon. Combine 2 tablespoons of cinnamon mixture
with the apples in a bowl, then stir the apple mixture into the batter.
Pour batter into an 8-inch spring-form pan that has been coated with cooking
spray. Sprinkle remaining sugar/cinnamon mix on top. Bake at 350 degrees for
1 hour & 15 minutes (or until cake pulls away from sides of pan) Cool..
then remove pan and cool completely on metal rack. Cut using serrated knife.
12 servings
(you can bake in 9 inch square pan or a 9 inch spring form pan, just reduce
cooking time by 5 minutes)

Enjoy!!

Is that half a cup, or half a stick [1/4 cup]?
